I made these and they were all gone within a day. They are
nice and crunchy with a roasted marshmallow flavor, and they are easy to make.
Ingredients:
3 egg whites
1-1/2 teaspoons clear vanilla extract
¼ teaspoon cream of tartar
Dash salt
¾ cup sugar
Directions:
Place egg whites in a small bowl; let stand at
room temperature for 30 minutes. Add the vanilla, cream of tartar, and salt.
Beat on medium speed until soft peaks form. Gradually beat in sugar, 1
tablespoon at a time, on high till stiff peaks form and sugar is dissolved. This
takes about 7 minutes.
Down to the messy part; put meringue mixture in a pastry bag fitted with a
1M star tip. Pipe a 1-1/4 diameter cookies onto parchment paper-lined baking
sheets.
Bake in a 250 degree oven for 40-45 minutes or until
set and dry, let cool. Carefully remove from parchment paper and store in an
air tight container.
